ZA'ATAR OREGANO SEEDS

The wild oregano of the Levant, this species is a common ingredient in Za'atar, a blend of herbs and spices common to many Middle Eastern cuisines. The composition of the blend depends on the region in which it is made. And likewise, Za'atar is the name for several wild herbs found in the Middle East and Mediterranean. Don't bother arguing over what the true “Za'atar" may be, because there is no such thing.
This species is easily recognized by its small soft silvery green leaves and powerful aroma. Nearly indestructable once established, plants seem most happy in full sun and dry soil, and appreciate a regular clipping. Short in stature, they are attractive and mounding. Perfect along paths in the rock garden, or in terra cotta pots on the patio.
Sow these seeds indoors in late winter or very early spring. Press seeds into moist soil, and just barely dust with fine vermiculite. Mist carefully with warm water. Cover with plastic. Kept warm (around 80°F) and moist, seeds will germinate within two weeks, typically. They can take much longer at cooler temperatures so be patient. Prick out seedlings once they have true leaves to grow on in individual 3" containers in bright light at warm room temperature. Avoid overwatering. These plants will not tolerate wet feet. Pinch to encourage branching.
Perennial in their native habitat, plants can be overwintered indoors in most climates if given enough light and warmth. Allow soil to dry between waterings. This species will not survive a winter outdoors in most American gardens as it barely tolerates frost. Can be successfully grown as an annual given the right conditions. It is our experience that container culture is ideal for this species in northern gardens.
