CUISSE DE POULET SEEDS

The delicious and easy to grow Echalion Cuisse de Poulet du Poitou is also an excellent keeper. Its torpedo-like shape makes it perfect for presentable onion tarts. One of these little onions is sufficient for a single salad or omelet. Flavor is sweet and rich and superior to that of Dutch shallots.
Unlike true Griselle Shallots, Cuisse de Poulet may be grown from seed: sow seeds about 1/4" deep in moist soil several weeks before transplanting outdoors; mist generously with warm water and cover with plastic; kept warm (70F) and moist in bright light, seeds will germinate in a week or so. Transplant seedlings to individual cells (72 cell flats are perfect) to grow on at room temperature in bright light. Transplant outdoors as soon as soil can be worked. Seeds may also be sown directly into the garden in spring.
Properly cured, Cuisse de Poulet will keep on a cool kitchen counter well into the next spring.
