We are generally reluctant to grow big common carrots in our gardens because they take up a lot of precious space and time and because we are fortunate to have several local farmers that grow a wide variety for market. We grow and sell Little Finger because it is remarkably unobtrusive and reliably fast and sweet, and Paris Market for its ease of culture in our rocky soil and lack of need for preparation beyond lopping the tops before tossing whole into Sunday roasts.
Dragon is not a common carrot. Sometimes incorrectly listed as a “purple" carrot, it is actually a Chantenay type cloaked in gorgeous violet coral ombré. This pretty skin is thin and need not be removed. These carrots are sweet and crisp with a distinctive spicy flavor and fragrance that has been bred out of commercial varieties. Best used fresh for crudités, as the color fades when cooked (although the flavor of the roasted carrots is incredible).
The dear departed seed whisperer Dr. John Navazio selected and perfected Dragon, which explains why it is among the easiest of the big carrots to grow in organic garden culture. Seedlings are vigorous and size up quickly. Thinned properly (to almost 3" apart) and given consistently moist loose soil, these carrots will be ready to pull in 70-80 days. They are spectacular bunched for market. If you grow carrots in your garden, you must try Dragon at least once.
