LITTLE FINGER CARROT SEEDS
Daucus carota ssp. sativa
Bred in France for canning and pickling, Little Finger is a fast-growing, extra sweet and crunchy carrot that is ready to harvest in about 8 weeks. Can be sown every two weeks throughout the growing season for a constant supply of "baby" carrots.
Sow these seeds around the date of your average last frost. Broadcast seeds with a light hand in loose, not-too-fertile garden soil. Barely cover seeds. Water daily to germinate in approximately two weeks. Thin seedlings to 3" in all directions. Keep carrots well-watered, as you would lettuce, which incidentally makes a great companion for carrots in the garden, along with Sweet Alyssum.
The greens of Little Finger Carrots are tender and delicious and make an excellent pesto and very tasty spanakopita.
Little Finger Carrots are perfect for containers and very shallow garden beds, as they grow to just 4" long and resist forking. They are easy to harvest compared to larger varieties, but do try to loosen the soil in advance with a garden fork to save yourself having to fish around in the dirt for decapitated carrots.
