This is the earlier, white-seeded version of the famously delicious lemon-yellow Romano bean, known in English as the “Marvel of Venice". Best as a fresh “green" bean, this Italian variety is extremely prolific when picked religiously.
One of the tastiest and prettiest beans for fresh eating, these long, stringless and meaty flat pods are frequently prepared in our house like so: cut crosswise into 1/8" pieces and dressed with fresh lemon, olive oil, fleur de sel, lots of chopped fresh herbs, and chive flowers. Along with snap peas and currant tomatoes, Meraviglia di Venezia beans may never taste better than they do right in the garden, but they are extremely adaptable in the kitchen and can take the place of boring green beans in almost any recipe, including (and especially) dilly beans.
Typical bean culture applies: sow directly into the garden after the last frost, or germinate indoors if you're planting into cool soil. Provide a strong trellis, as the vines will grow to 7' and set lots of heavy pods in a hot summer.
