PERSIAN CRESS SEEDS

This ubiquitous little weed species has been selected for food and medicinal use by various cultures over thousands of years. At least four distinct leaf shapes have been common in the past several centuries. The parent stock for these seeds came from Iran and thus are probably as truly Persian as it gets in the modern seed trade. Leaves are long and smooth and delicious. Perfect for tossing into brothy soups and impromptu salads.
These seeds germinate easily given consistent moisture and light. They may be tossed into the garden in spring. Plants grow quickly and will produce a crop in mere weeks. The seeds may also be started in flats under lights and harvested as microgreens. Incredibly versatile and nutritious. Mature plants are 2'-3' tall and dramatic, and indeed bolted cress has become a hot commodity among flower farmers as a floriferous filler. Without sufficient support, however, the plants will tend to flop in typical vegetable garden culture. Plants will self-sow generously given the chance. In the salad garden spent plants should be pulled and replaced with a summer crop of bush beans or an autumn crop of beets or big heading endive.
