Dutch is such an adorably goofy language that I could not help but use the Dutch name of this wonderful Dutch heirloom cabbage. ‘Savooiekool' means ‘savoy cabbage', and that's what this is. An incredibly beautiful golden savoy cabbage with a delicate texture and flavor that is best enjoyed fresh or very lightly stir-fried like Napa cabbage.

Bloemendaalse Gele is unique also for its cold hardiness. American gardens boast many cold-tolerant cabbages, though very few, if any, are as elegant as this. Heads are fairly small, oblong, and even pointed sometimes. So charming. Fantastic in the autumn salad garden alongside frisée and Rosencrantz lettuce.

Probably best grown in autumn where summers are hot, but cool lingering springs will produce nice heads as well. Start seeds indoors in late winter and transplant as soon as the soil can be worked. Sow again in very late summer for autumn harvests. Like all Brassica, cabbage prefers rich fertile soil and lots of moisture. Amend soils and mulch generously.

The beautiful golden yellow hue of Bloemendaalse Gele is a nice foil for the silvery violet of Red Acre cabbages. Tuck some emerald green Balady Aswan lettuce between for even more dynamic contrast.
