SEA FENNEL SEEDS

Perennial halophyte historically gathered for both food and medicine and even prepared in the mythical kitchen of Hecate. Also known as “rock samphire" and discussed in the 17th century by both Culpeper and Shakespeare. Long collected from English sea cliffs before being cultivated in gardens. Wildcrafting this species is now prohibited in the UK.

Fleshy and succulent aromatic foliage tastes of a spicier saltier wild fennel, and may be eaten fresh, or pickled and served as antipasti, as is customary in Le Marche. Fresh seed pods are very flavorful and may be prepared as capers. Dried leaves may be used to color and flavor handmade pasta.

Germinates best with some light stratification. Sowing outdoors in very early spring, or autumn where winters are mild, is ideal. Or sow into pots of moist soil, cover with plastic, and place in a sheltered location outdoors, like an unheated screen porch or barn. Germination may be hastened by darkness rather than bright light, so avoid grow lights. Ironically, germination is prohibited by excessive salinity, though established plants happily tolerate saline soils. They are also surprisingly tolerant of drought. Mature plants grow to just 15" and are fantastically ornamental.
