Amaranthus hypochondriacus ‘Opopeo’

Amaranth was an essential component of the Incan, Aztec and Mayan diets. For the Aztecs, amaranths rivaled maize as the most valued crop. In 1519 Hernando Cortés discovered eighteen imperial granaries filled with the seeds of Amaranthus hypochondriacus. Archaeobotanical evidence suggests that this species has been cultivated for at least 9000 years.

This species of amaranth is native to Mexico and Guatamala, where it is still grown commercially. The selection ‘Opopeo’ is adapted to northern gardens, where seasons are short and/or cool. This particular seed crop was grown in Montana! Mature plants produce huge quantities of pale edible seeds that contain up to 19% protein and more soluble fiber than any true cereal. Seeds are slightly smaller than the previous selection we offered, but just as delicious and more reliable in the north.

Amaranth seeds contain far fewer saponins than the inexplicably more popular quinoa and may be consumed without exhaustive preparation. They are easily popped and used like rice crispies in nutritious portable desserts, or “energy bars" as the kids call them. They are easily ground into flour and, especially along with Chia, contribute to nutritious vegan and gluten-free pastries that are actually worth eating.

Sow these seeds into warm garden soil in full sun. Mature plants can sometimes grow to 6' and are incredibly ornamental. Tolerant of drought as well as torrential rains. Space generously for best seed production. Leaves may be harvested sparingly throughout the season. Prepare as you would spinach, unless you favor spinach salad. These amaranth leaves should be cooked prior to consumption. This selection is honestly best grown for grain. We recommend our Red Amaranth, A. dubius, for greens.
