These peppers were historically grown in Syria for use as a condiment or seasoning, though ongoing circumstances have seen this pepper grown around the world in effort to satisfy the demand that cannot currently be met by Syrian farmers. Stocky elongated red pods are fleshy and fragrant. They are traditionally dried, but only partially, and then coarsely ground or crushed and sprinkled atop virtually everything from salads to grilled meats.
The heat of Aleppo is mild but the flavor is rich and sweet and slightly tangy. Best when grown in a hot summer. Fairly late to ripen, with first ripe fruits appearing in about 80 days. Growers in cool climates or with short seasons may not get many red pods unless seeds are started quite early and transplanted into successively larger pots for several weeks before transplanting into warm fertile soil in full sun after all danger of frost has passed. Or try growing these plants in large containers of fertile soil on a hot patio to hasten fruit production and ripening. All plants must be staked lest they collapse under the weight of heavy fruits.
