Described as “elegant” by William Woys Weaver in his beloved tome 'Heirloom Vegetable Gardening', this beautiful yellow wax bush bean is the easiest and earliest that I have grown. It will germinate in cool wet soils and produce pretty beans that are ready to harvest in as little as 45 days. Unlike many French beans remain tender and delicious on the plant for several days. Plants are stout and prolific, growing to just 12"-18". They do not require support.
The flowers of Beurre de Rocquencourt are a delicate lilac and quite tasty in salads. Pale yellow beans are great right off the plant but benefit from a quick dip in boiling water before being plunged into an icewater bath and served as crudités.
Sow seeds into the garden, planting 1/2" to 1" deep and at least 2" apart in soil that is at least 65°F. Keep soil moist until germination occurs. Thin beans to at least 4" apart. Mulch with straw or grass. Though beans rarely require nitrogen fertilizers, very poor soil should be amended with kelp and fishbone meals. Water frequently for best production. Beans require full sun.
