OPAL CREEK SNAP PEA

Another fantastic snap pea bred by Dr. Alan Kapuler, and named for one of the last remaining old growth forests in the Pacific Northwest. Parentage includes both Golden Snow and Sugar Snap, and the result captures many of the best qualities of both. Notably, Opal Creek produces the most sweet and juicy shoots and tendrils. In our market days, we bagged Sugar Snap greens, but today we'd use Opal Creek.

White flowers produce sweet snap pods that begin a beautiful lemon yellow. As pods fill with peas, color fades to a pale spring green. Flavor is fantastic, and like Golden Snow the plants produce well into early summer, withstanding more heat than most common snap peas can.

Sow directly into the garden in both early spring and autumn. These plants are entirely edible and may be harvested at any time. Trellised plants will ultimately grow to 6', producing loads of succulent pods and tendrils. Toss into soups and salads willy nilly. Especially lovely in late autumn and winter ramen.
