RED AMARANTH SEEDS
Amaranthus dubius
An improved selection grown primarily for ‘greens'. Saturated red foliage is an excellent summer substitute for spinach. Toss into soups willy nilly. Beautiful microgreens. The preferred species in Asia and much of Africa for culinary use. Best flavor and texture when young, although several cuttings of new growth may be had each season in moist soils. Mature plants can grow upwards of 6’. Leaves are most often blanched before use to eliminate any excessive concentration of nitrates or oxalates.
This species of Amaranth is considered by many taxonomists to be from Asia, where it has a long history of use as a nutritious leafy vegetable. Foliage is rich in vitamins, minerals and protein. In contrast, Amaranth species native to the Americas were more often selected for grain production.
Sow seeds directly into the garden once soils have warmed in spring. May be sown under lights all year for vibrant microgreens.
