ELKA WHITE BREADSEED POPPY

This Slovakian heirloom is named for one of the few growers in the country still maintaining this historic strain. Unlike commonly available varieties, the gigantic seed pods of Elka have no vents and will keep seeds safe and dry until harvest. The white seeds have an extraordinary sweet nutty flavor and a high oil content that makes them suitable for pressing.
Many traditional cuisines of Eastern and Central Europe have used crushed sweetened poppy seeds to fill and flavor pastries, just as other cuisines use almonds or pistachios. These seeds make a fantastic addition to salads, either in dressings or just sprinkled atop for texture. Toss them into linguine with mascarpone and gorgonzola. So good.
Sow seeds directly into garden soil in early spring. Thin to at least 6" apart. Beautiful white flowers with lilac blotches on 4' stems. Best in full sun with some protection from wind. Absolutely stunning en masse, even once petals have dropped. Allow pods to dry before harvesting. Store seeds in airtight opaque containers. Take care to keep cool, as seeds will become rancid quickly if exposed to heat. Best consumed within a year.
