JAPANESE HULLESS POPCORN

An unusual dual-purpose corn that is absolutely perfect for small gardens. Short plants to just over 4' typically produce at least four ears per stalk. The immature ears are suitable for “baby corn", which can be eaten in their entirety both raw and cooked. The kernels of mature dried ears are a beautiful translucent pale cream, and produce fantastically tender popcorn.
Sow these seeds into warm fertile garden soil in spring. Tuck about an inch below the surface and water frequently until germinated and well-rooted. Mulch or irrigate if possible, as the roots are very shallow indeed.
For baby corn, pick ears within three days of silks appearing. Any later and the cobs will not be tender enough to eat.
For popcorn, allow plants to dry in the field before harvesting. Only fully ripe and field-dried corn will come off the cob easily, so leave them in the field for as long as possible. Once harvested, shuck and dry indoors for several weeks more. After removing kernels from the cob, store them in an airtight glass jar.
