An old French escarole that grows to mammoth proportions. Sweet juicy leaves are perfect for salads and soups. Substantial enough for braising. Golden hearts are fairly self-blanching, but plants may also be tied just before harvest. This also makes them easier to bag and stack in the refrigerator or cold cellar, where they will keep for several weeks.
Escarole is best sown in July for autumn and winter harvests. Sow seeds into flats 4-6 weeks before transplanting. Space generously, as these plants will grow to well over 1' in all directions. Best with some protection from freezing temperatures.
Seeds may also be sown with lettuces for cutting in early spring. Makes delicious mesclun and misticanza.
