PARIS MARKET CARROT
Daucus carota ssp. sativus
An improved selection of this historic French carrot. Dense uniformly round roots are appropriate for shallow rocky soils. Deep orange color and sweet flavor, especially when roasted. Suitable for “baby" vegetable production, especially in combination with Boule d’Or turnips. Easy and reliable in soils that tend to produce forked roots in common carrots.
Sow carrot seeds outdoors around the date of the last frost. Thin Paris Market seedlings to at least 3", and ideally 5" in late summer if you want bigger roots for winter storage. Consider sowing with radishes to conserve garden space. Harvest the radishes as you thin the carrots. Begin to harvest these carrots around 60 days after sowing. Remove tops promptly for best storage quality. Carrot Top Pesto is delicious and nutritious.
