WHITE EGG TURNIP SEEDS

These sweet white roots have been a staple of the American kitchen garden for two hundred years. Nutritious and easy to grow, they are sweet enough to eat out of hand, and equally delicious when quartered and tossed into the Sunday roast. Consider slicing them thin on a mandoline before pickling in a sweet pink Shiso brine. Tops are edible and nutritious, although not as substantial or flavorful as those of Tennoji.
Here in the Northeast we sow in spring and again in late summer. Where winters and summers are mild, they can be sown all year. Prefers moist fertile soil in full sun. Harvest roots for bunching in 30-40 days. In autumn allow them to mature for 10-20 days more for roots that will keep for several weeks in cold storage. Be sure to lop tops before storing.
